The grand opening and ribbon cutting for the new Highwind Brewing Company in downtown Junction City has been announced by the Chamber of Commerce. The date is Feb. 28th.
The establishment will be located at 726 N. Washington. According to Matt Hoover initially the brewery will be open from 4-8 p.m. Tuesdays through Saturdays. The plan is to expand those hours as the business grows. The brewery is currently in a soft opening phase where reservations only are allowed until the grand opening. Eleven craft beers will be sold and there will be a full bar with wine and cocktails. Coca Cola products will be available along with tea and coffee. There will be two restaurants including Mill Pizza where signature pizzas and salads are served. 726 Bistro is still under development. Eventually it will serve appetizers and hand held burgers.
The business has approximately 20 employees.
