MANHATTAN, Kan. - A unique Manhattan eatery celebrated its first birthday recently, and considering the times, that's a pretty special milestone.&nbsp;

Guilty Biscuit, a fast-casual-style restaurant on Manhattan's west side offers biscuits, biscuit sandwiches, and several other unique cuisine options that throw a twist in a traditional breakfast staple.&nbsp;

"It's really, kind of quietly become something that I'm really unbelievably proud of," said Operator Evan Grier. "The creation of the whole concept of Guilty biscuit was done absolutely the wrong way, from what you would normally want to do when you're starting up a brand."

According to Grier, he and his colleagues cooked up Guilty Biscuit on a whim during the summer of 2020, and after just a few short weeks were baking up biscuits.&nbsp;

"There wasn't a lot of market research, there wasn't a lot of due diligence, there wasn't a lot of time to just think and stew on all the small decisions and details that need to go in to having a successful restaurant brand," said Grier. "We, and I, believed and trusted in our team to be able to pull that off on the fly and they did."

Grier believes he works with the best operations team in town, and with Guilty's success being evidence to that, he's confident in what lies ahead for the business, even if there's still some people struggling to wrap their head around having biscuits for every meal and not just breakfast, myself included.

"The neat thing about Guilty Biscuit is that the Guilty Biscuit brand isn't fully cooked," said Grier with a smirk. "So we still get to play and have fun inside the framework of&nbsp; the name Guilty biscuit, but I would encourage our patrons and fans in the community to continue to look and watch what we're doing there because that's really where we get to have some fun and play a little bit."

Even if you're not a "Biscuit-lover," Guilty offers plenty of substitutes, like buns instead.&nbsp;

Grier also added that although Guilty biscuit isn't really a breakfast-style restaurant, they just might be exploring an earlier opening on weekends for fans who want biscuits earlier in the day.&nbsp;

"We've listened to our customers, we hear you, we just need to get staffed up and we'll start focusing on some breakfast hours on the weekends and see how it goes," said Grier.

Guilty Biscuit looks back on its wild first year in MHK

MANHATTAN, Kan. -&nbsp; The Manhattan Area Chamber of Commerce unites the people of Manhattan to its surrounding area, its businesses, and the military base that supports it. 

Manhattan is home to many diverse and amazing celebrations that welcome and unite both the community and visitors from all over the world., and the Manhattan Chamber of Commerce is right at the forefront of those celebrations and the community that supports them.&nbsp;

The Chamber recently held its annual Flint Hills Regional Leaders Retreat, which hosts influential figures from Riley, Pottawatomie, and Geary Counties in an effort to unite the area towards a common goal of elevating each of the communities.&nbsp;

Helping to organize and orchestrate an event of that magnitude shows just how big of a key role that the Manhattan Chamber of Commerce plays in the development of its very own community. At the Regional Leaders Retreat,&nbsp;Manhattan Chamber of Commerce President and CEO Jason Smith said, "We challenged people to come up with big ideas and we will come back tomorrow and pick two or three to really delve into a little deeper. We were very pleased with the amount of participation and engagement that we had today."

The Flint Hills Regional Leaders Retreat is only one event on a list of dozens throughout the year helping to unite the Chamber to its community.&nbsp;

Another organization that is vital to the Chamber and the Manhattan area is the Young Professionals group, or "Hype," as it's nicknamed, which helps to bring young business professionals who may be new to the city into a social setting to network, develop personal relationships, and of course, have fun. It also draws in members from Fort Riley, or former Kansas State University students transitioning into post-graduate lives.&nbsp;

"Getting involved in the Chamber was really important to me as I transitioned into the professional world in the same community where I grew up and went to college. At first, getting involved in Hype was about making friends and getting to know others in the same stage of life as me," said grace Stanfield, a Hype member and the Chair of Hype's Play Pillar." As we worked on rebranding and restructuring the organization in 2019, it became evident that young professionals are the future of the business community, not just here in Manhattan, but everywhere. I think it's important for Hype to create an environment for young professionals to relate to one another personally and professionally, but it's crucial for that to happen under the larger umbrella of the Chamber because our young talent is an asset that the Chamber must leverage in its greater economic development plan."&nbsp;

Hype hosts events almost every week, with summer highlights like Aggieville Olympics and Backyard Splash, as well as monthly staples Hooray Thursday and Group Lunch. "It involves five chefs and a shaved ice vendor," said Tyler White, owner of the Culinary Collective. "So, it's Pogo's, Chita's, Whren on the Rauxe, Chrissy Caters, Aunt Meka's, and Showtime BBQ."

Located at 302 Whiting Street in Milford, this jumping joint is worth the adventure out to experience each of its unique culinary perspectives.&nbsp;

"We rotate throughout the week on who's there, who's in the kitchen. That gives our patrons five different menus throughout the week that they can select from," said White. "Since it is located at a campground, they're also there for a set amount of time, the campers are, so we wanted to have a variety that they can pick from."

It may be a little bit "outside of the box," housing multiple restaurants under one roof, and at a campground no less, but the reception from customers and restaurateurs alike is there couldn't be a better place to serve up the variety.

"I absolutely love the location," said Samantha Rasman, Owner of Chita's. "It's absolutely beautiful, and we are blessed with great staff at the Flagstop Resort."

White reiterated Rasmun's sentiment, adding that you can look straight from the Collective's back deck directly to Milford Lake and that it's about a two minute walk to the edge of the water.

The very next year, the Kansas Legislature authorized counties to levy a tax to support community mental health centers. Over time, 9 more counties in North Central Kansas joined and eventually in 1982 the Board of Directors changed its name to Pawnee Mental Health services. In 2019, Pawnee opened a Crisis Stabilization Unit in Manhattan. The CSU provides 24/7 crisis and substance use intervention for adults, as well as screening and referrals for minors. Along with the CSU, a crisis hotline was established to serve all 10 counties in Pawnee’s service area.

Currently, Pawnee provides services ranging from Crisis Intervention to Adult and Youth Rehabilitation Services, Medication Management, Therapy and Recovery Services, and Respite. Our dedicated and professional staff works one-on-one with each client to establish a care routine that fits their needs. Pawnee Mental Health

MANHATTAN, Kan. — Tallgrass Taphouse unveiled two official flagship beers Wednesday afternoon, honoring its two most popular brews with a permanent place on tap.&nbsp;

Operator Evan Grier said the event was in the works prior to the COVID-19 pandemic, but were finally able to gather among friends to celebrate the beers officially.&nbsp;

"Up to this point, Taphouse really focused on being a test kitchen," said Grier. "One of the things that makes us really unique, is that we roll out six to eight beers every month, so as guests come in they really have the opportunity to experience Taphouse uniquely and the fact that we're always pulling out new beers."

The beers stapling their place on tap are "Beauregard," an American Pale Ale, and "Ragnarok," a German-style Festbier.&nbsp;

"We liked Beauregard and Ragnarok so much that we decided to have those available to our guests all the time," said Grier.

Chris Kind-Chalmers, Head Brewer for Tallgrass Taphouse said the process for developing the two staples was surprisingly simple.&nbsp;

"For Ragnarok, this was a long time coming," said Kind-Chalmers. "I had been wanting to make an authentic, German-style festbier for a long time. Most of the examples that you see nowadays, or even before this are kind of Americanized, but we really wanted to recreate that flavor experience for people. So, obviously going right to the source, German malts, German yeast, German hops. We're not reinventing the wheel here, we just wanted to give people that authentic experience.

Taking Ragnarok "to the basics," allowed Kind-Chalmers to nail the composition, and create a house favorite in the Festbier.&nbsp;

Beauregard, is named after "Manhattan's most famous alligator," found his way wild and free in Wildcat Creek, and like it's wild gator counterpart, the beer didn't take long to become talk of the town either.&nbsp;

"It didn't take too long. Honestly, we hit it pretty quick, right off the bat," said the Brewmaster. "The community of Manhattan has really responded to it, like instantly and they love it."

The celebration was an invite-only function, with friends, family, and local business supporters all present to help cement the two beers atop the Tallgrass Taphouse tap for good. The drinks will be permanently available for patrons 21+ to enjoy until the keg runs dry.&nbsp;

Tallgrass Taphouse anoints two beers as 'flagship' brews

MANHATTAN, Kan. — There are few things more local than a restaurant born and bred by its surrounding community. Scott Sieben has created yet another staple of Manhattan eateries, and he jump started it in the middle of a global pandemic.

Named after a former country western bar in Aggieville, Rockin K’s has revived the name, but brought a brand new identity. Located just across the street from famed Bill Snyder Family Stadium, and within the Kansas State University Foundation, Rockin K’s is deep in the heart of what makes Manhattan, Manhattan.

“Our biggest challenge was obviously seeing the future,” said Owner Scott Sieben. “At that time, when they asked us to think about taking over the restaurant, both of our stores were closed, so it was really tough to look at it and say ‘where do we see this next year’.”

Well, it’s next year, and Rockin K’s is growing daily as it finds its groove and builds towards the next “next year.”

“The Foundation was great to work with. They helped us ease into it,” said Sieben. “They were really great.”

Now, as Rockin K’s looks towards its future, it will expand its reach. Working hand in hand with its other current restaurants, Mr. K’s and Kite’s Bar &amp; Grill, Sieben has announced plans to also open a new establishment in Aggieville.

“That will be Kite’s Aggieville Drafthouse,” said Sieben excitedly. “It’ll be a little more upscale comfort food. We’re going to have some steak and some seafood options, just a little more elevated from what we’ve done on the Kite’s side, but it’ll all be under one roof.”

Sieben said that he has brought on Bud and Bobby Cox to assist with the food at the new restaurant, which will sit inside of Kite’s in Aggieville, but utilize the open space on the north side of the business, just off the corner of 12th and Moro, marked by a brand new entryway.

The new establishment will also offer several beers and wines on tap, as well as offer upscale cocktails on its drink menu as well.

Sieben couldn’t hide his excitement about the new eatery, but couldn’t help but be a little giddy at the thought of what Rockin K’s was building into for the coming year.

“The last couple of months, we’ve really seen an increase,” said Sieben. “We’re seeing a lot more faces. For a while we were doing a lot of to-go orders, which is great. We still do a lot of to-go orders, but to highlight our food, I hate to put it in a to-go box.I feel like it’s never as good takeout as it is in the restaurant, so it’s nice to see people coming in now and actually being in the restaurant to eat.”

That undoubtedly will build even more over the coming months and leading into the upcoming K-State football season. Sieben noted plans for a potential beer garden on game days, so fans can enjoy drinks and food from Rockin K’s before games, and of course after Wildcat victories.

WAMEGO, Kan. - Tony Coleman has been working in the electrical field since he was 17 years old, working his way up from apprentice, to journeyman, owning his own business today. In 2016, he took the leap into owning his own business, running it from his family’s dining room for the first year.

Initially, Coleman served exclusively industrial and commercial markets, but has since pivoted into also serving the residential electrician needs within the area.

“Our bread and butter are our industrial customers, but when we opened our business, some of the first phone calls we had were residential customers going, ‘wow, you answered your phone’,” said Michelle Coleman, Tony’s wife, and now office manager at Coleman. “So we quickly realized there was a market for that.”

Now, Coleman has added a handful of qualified and highly-experienced electricians to help service not only its bread and butter, but also to meet the residential needs in the communities they serve.

“It’s really taken off,” said Michelle about Coleman and its addition of residential service. “And we recently invested in a software system called ServiceTitan, and that’s important because our customers need to know who’s coming to their house.”

ServiceTitan sends messages to customers with pictures of the electrician coming to service their home, as well as biographies of each electrician to help customers feel more comfortable when they receive service.

“It was a huge investment. It was a big leap for us to invest in that software, but it’s been hugely beneficial because we can send information of when one of our guys is leaving a job and going to the next, it sends a text to that person to tell them the guy is on the way,” said Coleman.

The software even has a GPS feature that allows the customer to see where their technician is and how long it will be until they arrive. Coleman Electric has also gone the extra mile in making sure the customer is comfortable by making sure that every electrician drives a company-branded truck, so that customers never have to worry about letting someone random that they cannot trust into their home.

Making sure the customer feels comfortable with the process has become the number one priority of Coleman because everyone needs tradesmen in their lives. Everyone will need something fixed at some point, and being able to help a customer get a job done right, and not have to stress about having a stranger in their home has become increasingly important, so that they feel safe.

“It’s very important to us,” said Michelle Coleman on the comfortability of the customer. “We all need plumbers, we all need electricians, and some are more professional than others, and that’s what we’re trying to promote. Our guys are going to be dressed nicely, they’re going to wear booties when they go into your house, they’re going to clean up after themselves, but we also add that layer of protection so you know who’s coming to your house.”

From selling off the porch of John and Lucile's house, to selling our fresh, homegrown produce all over&nbsp;Kansas, Missouri and&nbsp;Nebraska,&nbsp;Britt's Farm has adapted to accommodate our customers desires and needs while being good stewards of the&nbsp;soil. Our&nbsp;250 acres of plump fruits and&nbsp;vegetables are all pollinated by our own honey bees and harvested by our team.&nbsp;

As the business has evolved through the years, some of the things we&nbsp;enjoy offering are pick-your-own strawberries and blackberries -- a perfect activity to do with friends and family.&nbsp;Our own raw honey, grass fed and finished beef, pasture raised&nbsp;eggs&nbsp;and&nbsp;Mexican vanilla are some of our specialized products.&nbsp;Our fresh vegetables&nbsp;in their season are available in our store, at area farmers markets,&nbsp;wholesale ordering and in some area grocery stores. The pumpkin patch is the largest in the area and continues to grow every year. We enjoy stocking locally and naturally prepared jams, salsas and pickled items as well as Hildebrand's milk and&nbsp;Sugar Shack candles.

As a family&nbsp;owned and operated business, most days you can find Richard and Angela around the farm and any of our children assisting to run the cash register or happy to share their toys&nbsp;with your&nbsp;children. &nbsp;

In our ongoing efforts to be caring neighbors, we regularly sponsor charitable efforts within our area school district, at regional animal shelters, local healthcare facilities, and the state college system. Over the years, we’ve also joined forces with national organizations such as Building for America’s Bravest, Habitat for Humanity, Susan G. Komen Breast Cancer Foundation, and CASA.

But he had a bigger vision. With the love for his hometown in his heart (which is still there to this day), he made his way to the big city. He envisioned a bar and grill where the service is always friendly, the food is tasty, and the beer is ice cold. It would not just be another bar and grill.
